Wash the mushrooms thoroughly under warm or cold running water to remove soil. Cut out any spoiled areas if present. Tiny mushrooms (up to 2 cm) do not need peeling, just wash them well. Larger mushrooms should be cleaned from their outer skin.

Prepare all the necessary ingredients. First, let's define what "pork corners" are – this cut of pork comes from the shoulder area, between the neck and ribs. It is also sold under names like bone-in pork loin chop or pork cutlet. You can buy it pre-sliced or purchase a whole piece and cut it into slices yourself. Preheat the oven to 200°C (392°F).

Wash and pat dry the pork chops. Remove the skin if present. Season both sides of the pork with spices, rubbing them into the meat. If you don't like bone-in meat, you can cut off the bone or use a boneless cut.

Peel the onion and slice it into rings.

Wash and dry the tomato, then cut it into thin slices. Choose firm and juicy tomatoes; overly soft ones will lose their shape during cooking and ruin the dish's appearance.

Grate the cheese using a coarse grater. Any cheese will work for this dish—hard, semi-hard, or soft cheeses like mozzarella. The main requirement is that it should be tasty, of good quality, without milk fat substitutes, and should melt well.

Place one pork chop on a sheet of foil. Layer onion rings and mushroom slices on top. Then, add the tomato slices. Sprinkle everything with grated cheese and drizzle with mayonnaise.

Fold the edges of the foil over the meat, ensuring that the foil does not touch the mayonnaise. Repeat the process with the remaining pork pieces.

Place the foil-wrapped pork on a baking tray and put it into the preheated 200°C (392°F) oven for 50–55 minutes.

About 10–15 minutes before the dish is done, open the foil and return the meat to the oven to allow the cheese to develop a golden crust. Check for doneness by piercing the meat with a knife—if it slides in easily and clear juices flow out, the meat is ready. If the juices are pink or red, continue baking.
