Baked Pollock with Carrots and Onions in Sour Cream

An affordable, simple, and hearty lunch or dinner for the whole family! Pollock baked with onions and carrots in sour cream is incredibly tasty, appetizing, and healthy for everyday meals. Preparation
Step 1
Choose a large, bright orange, sweet carrot, as it plays an important role in this dish. Wash thoroughly under running water with a brush. If needed, thaw the fish by transferring it from the freezer to the lower shelf of the fridge.
Step 2
Peel the onion, rinse with cold water, and slice into thin half-rings or quarters.
Step 3
Peel the carrot and cut into thin strips.
Step 4
Heat a small amount of refined vegetable oil in a pan. Add the onion and carrot and sauté over low heat until soft, stirring frequently to prevent burning.
Step 5
Wash the pollock, remove fins and tail, cut open the belly, and remove the innards. Remove the black film in the belly as it is bitter. Rinse again, pat dry with paper towels, and cut into portion-sized pieces. Season with salt and pepper. Optionally add suitable fish spices. If spices contain salt, adjust accordingly.
Step 6
In a small bowl, mix sour cream with whole-grain mustard. Add a couple of tablespoons of boiled water or cream. Season with salt and pepper and stir well - the sauce is ready.
Step 7
Lightly grease a baking dish with vegetable oil (olive or sunflower). Place fish pieces close together.

Spread the sautéed vegetables over the fish.
Step 9
Pour the sour cream sauce over the vegetable layer and spread evenly. Bake in a preheated oven at 200°C (390°F) for 30-40 minutes. Oven times may vary.
Step 10
Serve the baked pollock with onions and carrots in sour cream warm, sprinkled with fresh herbs (parsley or dill). Vegetables can serve as a side dish, but for a heartier meal, serve with mashed potatoes, rice, or pasta. Enjoy!
