Baked Pirozhki with Fish and Rice Filling

Tender dough and juicy filling - delicious! A simple recipe for sweet yeast pirozhki. Serve hot or cold. Try with saury, pink salmon, or tuna. They can also be frozen and reheated as needed.

Preparation
Step 1
First, prepare all the ingredients and spices.
Step 2
To make the dough, take a large bowl and a fine sieve. Sift 450 g (3 2/3 cups) of flour into the bowl (reserve 50 g / 1/3 cup for dusting). Add instant dry yeast, baking powder, and mix.
Step 3
In another bowl, pour in 250 ml (1 cup) of milk at room temperature (reserve 20 ml / 1 tbsp for brushing). Crack in an egg, keeping part of the yolk for brushing later.
Step 4
Add sugar and salt to the milk mixture and stir.
Step 5
Gradually add flour to the liquid base, mixing well. Flour amounts may vary - judge by dough consistency. During kneading, add 30 g (2 tbsp) softened butter.
Step 6
Knead the dough by hand for about 10 minutes until smooth.
Step 7
Coat the dough lightly with vegetable oil, form into a ball, cover with a towel, and let rise in a warm place for about 50 minutes, or until doubled in size. To test, press a finger in: if the indentation stays, it’s ready.
Step 8
Heat a skillet with vegetable oil, add finely chopped onion, stir, and fry over medium heat until golden. To reduce eye irritation, rinse onion and knife under cold water first.
Step 9
Place canned saury into a small bowl and mash it well.
Step 10
Add 40 g (3 tbsp) butter and black pepper to the fried onion for extra flavor.
Step 11
Mix all skillet ingredients and heat for 2 minutes until butter melts.
Step 12
In a bowl, combine cooked rice with the fried onion mixture, mix well.
Step 13
Add the mashed saury to the rice-onion mix, stir until even. Filling is ready.
Step 14
Grease your hands and work surface lightly with oil. Place risen dough, knead briefly, divide into ~14 portions, roll into balls, cover with towel.

Flatten each ball into a disk and place 1 tbsp of filling inside.
Step 16
Seal the edges tightly to form pirozhki. Place on a floured baking sheet and let rest for 20 minutes. Preheat oven to 350°F (175°C).
Step 17
Decorate tops with small scissor cuts, then brush with yolk mixed with warm milk.
Step 18
Bake at 350°F (175°C) for 18-20 minutes until golden. Do not open oven door while baking.

Remove from oven, transfer to plates, and serve warm.
