Baked Pike Fish Cakes (Oven)

Step 1
How do you bake pike fish cakes in the oven? Prepare the necessary ingredients. If you have a whole fish, gut it, remove the scales, fillet it, and remove the bones. The fillet weight after cleaning is 450 g (about 1 lb). Run the fish through a meat grinder or blend in a blender. I used ready-made pike mince. If using frozen fish, thaw it first. Melt the butter in advance. You can also add an onion to the mince.

Cut the crusts off the slices of white bread. Pour milk over the bread and leave for 5-7 minutes.
Step 3
Put the fish mince in a bowl. Squeeze the bread to remove excess milk and add it to the mince. Add the egg, pour in the melted butter, add salt and pepper. If you plan to add onion, you can chop it very finely or grind it together with the fish pieces. Chopped onion can be added raw, or sautéed first in vegetable oil until lightly golden.
Step 4
Knead the mince thoroughly by hand. If it turns out too runny and watery (this often happens when blending thawed fish, because it retains more moisture than fresh), add 1-2 Tbsp semolina and let it stand for 20 minutes to swell. Then refrigerate the prepared mince for 20 minutes.

With wet hands, shape medium oval patties from the chilled mince and coat them on all sides in breadcrumbs. If you don’t have breadcrumbs, you can make them: cut a few slices of white loaf into cubes and dry in the oven until golden. Then put the dried cubes in a bag and crush with a rolling pin, or blend in a blender.
Step 6
Place the patties on a baking sheet lined with parchment paper and greased with vegetable oil. Brush the tops of the patties with vegetable oil as well. Bake in a preheated oven at 180°C (356°F) for 30-35 minutes, until golden. The exact time depends on your oven. Enjoy!
