Baked Meat Patties with Quail Egg
Incredibly tasty, simple, and beautiful - like a celebration every day. Baked meat patties with egg and onion are not only very delicious, they also look especially impressive when sliced. That is why they can confidently be served on a festive table as a main dish. They pair well with any side dish and with a fresh vegetable salad.

Step 1
How do you make baked meat patties with egg and onion in the oven? Prepare the necessary ingredients. Any meat will work for the filling: pork, beef, chicken, or lamb. You can even combine several kinds of meat for a richer flavor. I used only pork. You can also use ready-made ground meat, whichever is more convenient for you. If your ground meat is frozen, thaw it beforehand.
Step 2
Rinse the meat well under running water and remove everything unnecessary, such as sinews and membranes. Pat it dry and cut it into pieces convenient for grinding. Peel the onion and garlic, rinse them, and dry them. Cut the onion into 4 parts. Soak the loaf bread in milk in a separate bowl for just a few seconds, then remove it and squeeze it lightly.
Step 3
Pass the pork, onion, and garlic through a meat grinder. I usually prefer to grind the filling myself and only buy ready-made ground meat in exceptional cases. It seems much tastier to me this way. But if time matters, store-bought ground meat is easier.

Salt the ground meat to taste.

Add ground black pepper.

Add 1 raw chicken egg.
Step 7
Add the loaf bread that was soaked earlier. If you wish, you can pass it through the meat grinder together with the meat. I usually do not do that. Just crumble the softened bread with your hands.
Step 8
Knead the filling well. It is better to do this with your hands. Then lightly slap it against the work surface to remove excess air. After this, the mixture will become denser and will hold its shape well.

Now let’s prepare the filling. I used quail eggs. Boil them for about 5 minutes, then cool and peel them. I chose quail eggs for this recipe because, in my opinion, they look more interesting when sliced. But this is not essential - you can use chicken eggs and cut them in half. Or finely chop boiled eggs and mix them with green onion. Choose whatever you like best.
Step 10
Prepare the coating: breadcrumbs. I mix them with dry spices and salt. You can do the same or simply use plain breadcrumbs. My mixture contains breadcrumbs, paprika, dried garlic, and ground black pepper.
Step 11
Lightly moisten your hands with water. Take a portion of the meat mixture about the size of a chicken egg. Roll it into a ball, then make an indentation in the center.
Step 12
Place a whole quail egg, half a chicken egg, or the egg and green onion filling into the indentation.
Step 13
Coat each patty in the breadcrumb mixture and place it on a baking sheet greased with vegetable oil. You can line the baking sheet with parchment paper so that nothing sticks and you will not need to scrub it afterward. Bake the patties in the oven at about 180°C (350°F) for around 30 minutes, until done. Adjust the exact time and temperature to your oven.
