Baked Mashed Potatoes with Cheese

Preparation
Step 1
Take unsalted butter without vegetable additives. Choose a hard cheese with a sharp, rich flavor and without milk fat substitutes.

Wash and peel the potatoes well. Cut into pieces and cover with cold clean water. Use filtered or bottled water, as tap water may have an unpleasant taste that will affect the dish. Boil the potatoes over medium heat. When the water boils, lower the heat and add salt. Cook the potatoes until tender, about 25-30 minutes depending on the type and size of the pieces.
Step 3
Check readiness with a sharp knife - it should pierce the potato easily. Drain the water.
Step 4
Mash the potatoes with a potato masher. Add the butter. Continue mashing until smooth and well combined.
Step 5
Grate the cheese on a medium grater.
Step 6
Add cheese to the mashed potatoes. Mix, using the masher if desired.
Step 7
Beat an egg into the potatoes. Add pepper.
Step 8
Mix the egg into the potatoes until a uniform, thick mass forms. Taste and add salt if necessary.
Step 9
Transfer the mashed potatoes into a piping bag with a nozzle - I used an open star nozzle. Line a baking sheet with parchment paper. Pipe the mashed potatoes into “towers” spaced apart.
Step 10
Preheat the oven to 392°F (200°C). Bake the potatoes for 15-20 minutes until golden brown on top.
Step 11
Remove the baked potatoes from the paper with a spatula. Serve immediately - they are tastier hot. Enjoy your meal!
