Baked Mackerel with Potatoes in the Oven

Instead of mackerel, you can use any other fish you like: hake, pollock, trout, salmon, etc. It’s not necessary to bake the whole fish. You can also fillet it or cut it into pieces beforehand.
Preparation
Step 1
First, prepare all the necessary ingredients according to the list. You can use either fresh or frozen mackerel. If using frozen fish, thaw it properly in the refrigerator on the lower shelf before cooking.
Step 2
Gut the fish, remove the head and fins, and rinse it thoroughly. It’s easier to clean the fish when it’s slightly frozen. So, before cleaning the mackerel, place it in the freezer for 30 minutes. If you’re using frozen ungutted fish, let it thaw a bit, clean it, then return it to the fridge to finish thawing.
Step 3
Rub each fish inside and out with salt and pepper.

Peel the potatoes and cut them into wedges.
Step 5
Peel the onion and slice it into half rings.
Step 6
Spread the potatoes in a baking dish. Drizzle with vegetable oil and sprinkle with salt and pepper.
Step 7
Spread the sliced onion on top.
Step 8
Lay the fish on top of the vegetables. Pour boiling water into the baking dish. Place the dish in a preheated oven at 200°C (about 400°F) for approximately 25-50 minutes. Mine took 50 minutes, but keep an eye on your oven. If the fish is cooked but the potatoes are still firm, remove the fish from the dish, cover the dish with foil or a lid, and continue baking the potatoes until done.
Step 9
Garnish the finished baked mackerel with potatoes and onions with fresh herbs and serve immediately. Enjoy your meal!
