Baked Mackerel Rolls Stuffed with Vegetables and Cheese

Preparation
Step 1
First, prepare all the necessary ingredients from the list. You can use fresh or frozen mackerel. If you are using frozen fish, thaw it properly on the bottom shelf of the refrigerator. If you are using frozen whole ungutted fish, wait until it thaws slightly, clean it, and return it to the refrigerator to continue thawing.
Step 2
Clean out the mackerel and rinse it. Cut off the head, tail, and fins. With a sharp knife, carefully separate the fillets from the backbone on both sides. Remove any remaining bones from the fillets with tweezers. Drizzle the fish fillets with lemon juice, then season with salt and pepper.
Step 3
Grate the cheese on a fine grater. Use any cheese you like, as long as it is natural and flavorful, without added vegetable fats. Cut the bell pepper into thin short strips. Peel the carrot and grate it on a coarse grater. Peel the onion and cut it into quarter-rings. Turn the oven on to 180°C (350°F).
Step 4
Heat the vegetable oil in a frying pan over medium heat. Add the onion and carrot and sauté, stirring, until softened. Add the bell pepper, salt, and pepper and cook everything together, stirring, for 1 minute.
Step 5
Spread the grated cheese along the full length of the inside of each mackerel fillet. Place 1-2 tbsp of the vegetable filling on the wider end of each fillet. Roll the fillet up from the wide end to the narrow end and secure it with a toothpick. Place the mackerel rolls into a baking dish greased with vegetable oil.
Step 6
Bake the rolls for 30-35 minutes at 180°C (350°F). Your baking time and temperature may vary.
Step 7
Transfer the baked mackerel rolls with vegetables to a plate, remove the toothpicks, garnish with fresh herbs, and serve immediately. Boiled young potatoes with butter, rice, or a fresh vegetable salad make excellent side dishes. Chilled rolls are a wonderful appetizer with an aperitif. Enjoy your meal!
