Baked Macaroni with Cheese Sauce

Preparation
Step 1
Prepare the ingredients. You can use elbow macaroni of any size. Preheat the oven to 350°F.

Bring a large saucepan of salted water to a boil. Add the macaroni and cook at a gentle boil, stirring occasionally, until al dente. Follow the cooking time indicated on the package, but leave the pasta slightly undercooked. Drain well in a colander.

Prepare the cheese béchamel sauce. Melt the butter in a frying pan or saucepan.

Add the flour and stir it into the butter. Cook over low heat for about 1 minute, stirring constantly, until lightly golden.

Gradually pour in a small amount of the warm milk, stirring continuously and pressing out any flour lumps. It is easier to achieve a smooth mixture while there is only a little liquid in the pan.

Once the mixture is smooth, pour in the remaining milk and stir well.

Season the sauce with salt, nutmeg, if desired, and herbes de Provence. You can also add ground black pepper. Bring to a boil over medium heat, stirring constantly, then cook briefly until slightly thickened.

Finely grate the cheese. Use any flavorful hard, semi-hard or soft cheese that melts well. Reserve a small amount for sprinkling over the top.

Add the grated cheese to the sauce.

Stir until the cheese has completely melted, then remove the sauce from the heat.

Beat the egg in a small bowl until smooth.

Place the drained macaroni in a large bowl. Add the beaten egg and mix well.

Pour in the cheese sauce and stir until the macaroni is evenly coated.

Lightly grease a 9-inch baking dish with butter or vegetable oil. Transfer the macaroni mixture to the dish and smooth the surface.

Sprinkle the reserved cheese evenly over the top.

Bake in the preheated oven for about 30 minutes, until lightly golden. Adjust the baking time according to your oven.

Serve the baked macaroni hot with fresh herbs and vegetables.
