Baked feta pasta

Preparation
Step 1
Preheat the oven to 200C.
Step 2
Place the block of feta in the centre of a large baking dish and scatter the cherry tomatoes around it. Sprinkle over the garlic and dried mixed herbs, then drizzle with olive oil and, if using, white wine. Season generously with salt and freshly cracked black pepper.
Step 3
Bake in the oven for 25-30 minutes, until the feta is soft and the tomatoes are blistered and beginning to caramelise.
Step 4
While the feta and tomatoes bake, cook the pasta according to packet instructions. Once cooked, drain the pasta, reserving 100ml/3½fl oz of the cooking water. Set both aside.
Step 5
Remove the dish from the oven and gently squash the tomatoes with a fork, then stir the feta and tomatoes together until combined. Add the reserved pasta water and mix to create a thick, creamy sauce.
Step 6
Stir in the cooked pasta and half of the basil, mixing until everything is evenly coated in the sauce.
Step 7
Finish with a final crack of black pepper and the remaining basil. Serve hot and enjoy immediately.
