Baked Cod with Carrots and Onions

A budget-friendly, simple, and very tasty dinner for the whole family! Baked cod with carrots and onions turns out incredibly juicy. Preparation takes no more than 10 minutes, and the oven does the rest. Serve with any side dish.

Step 1
Prepare the ingredients. Use cod fillets, but a whole fish will also work if you clean and portion it first. Properly thaw the cod to keep it juicy. Preheat the oven to 180°C (356°F).

Peel and dice the onion.

Grate the peeled carrot using a coarse grater.

Cut the fillet into portion-sized pieces and place them in an oven-safe baking dish. You can line it with foil for easier cleanup. Season the fish with salt and pepper. You can also use any fish seasoning of your choice.

In a bowl, mix the onion, carrot, and mayonnaise.

Spread the mixture evenly over the fillets.

Bake the cod in the preheated oven at 180°C (356°F) for 20-30 minutes. The exact time will depend on your oven and the size of the fish pieces. The top should turn slightly golden.
