Baked Chicken Soufflé
So pretty you can serve it on a festive table! Thanks to the broccoli florets and pumpkin, this chicken soufflé will interest both adults and kids. Its delicate, airy texture won’t leave anyone indifferent.

Step 1
Rinse the chicken fillet, pat it dry, and cut into small pieces.

Peel the pumpkin, remove the seeds, and cut it into small slices.

Rinse the zucchini and pat dry. The soufflé should be smooth and well blended, so it’s better to peel the zucchini. You may leave the skin on only if you have very young, tender zucchini with thin skin. If using courgette, the skin is tougher, so peeling is required. Cut the prepared zucchini into small cubes.
Step 5
Wash the apple, peel it, remove the seeds, and cut into small pieces. The apple should be medium-sized. Mine was large, so I used only half.

Put the chicken fillet, apple, zucchini, egg, and spices into a blender bowl.
Step 7
Blend thoroughly until you get a smooth purée. It should be completely blended with no small whole pieces left. The smoother the soufflé base, the more tender and delicious it will be.
Step 8
Transfer the chicken mixture into a baking dish greased with oil.
Step 9
Arrange the broccoli florets and pumpkin pieces on top. Put the chicken soufflé with pumpkin and broccoli into an oven preheated to 180°C (356°F) and bake for about 40 minutes, until done. Keep in mind the soufflé may rise slightly, and chicken can release a lot of juices that may overflow, so use a deeper dish or place parchment paper or foil under the dish.

Cool the finished soufflé slightly, transfer to a platter, and cut into pieces. You can serve it hot straight from the oven as a main dish, or chill it and serve as an appetizer. It will be tasty either way. Enjoy your meal!
