Step 1
How do you bake chicken fillet with tomato and cheese in the oven? Prepare all the necessary ingredients for the dish. It is better to use large, elongated chicken fillets so that you can make 4-5 cuts in them. Chilled rather than frozen meat is also preferable, as it will turn out juicier.
Step 2
Rinse the chicken fillets well. If there are large pieces of fat or any membranes, remove them. Using a sharp knife, make deep crosswise cuts in each fillet. Do not cut all the way through the fillet, otherwise all the juices will run out through these cuts. You should end up with 4-5 cuts. Season the fillets with salt and pepper, including inside the cuts.
Step 3
Rinse the tomatoes and cut them in half. Slice each half so that you get half-moon slices. The tomato slices should match the size of the cuts in the chicken. If the tomato is large, one will be enough; if they are small, it is better to use two.
Step 4
Cut the cheese into thin slices. The size of the slices should match the length of the cuts in the fillet. You can use any cheese, but it should melt well. That means Parmesan and similar dry hard cheeses will not work. You can choose an everyday melting cheese or a simple fermented cheese. For a more Italian-style flavor, non-brined mozzarella for pizza will work well, and you can also sprinkle the chicken with herbes de Provence.
Step 5
Insert one slice of cheese and one slice of tomato into each cut in the chicken fillet. The slices should go halfway into the meat and halfway stick out. As a result, when the cheese melts, you will have a very beautiful dish.
Step 6
Transfer the prepared fillets to a baking dish. Using a brush, coat the chicken with olive oil or any vegetable oil. Place the dish in an oven preheated to 180°C (350°F) for 35-40 minutes. The exact time will depend on your oven. It is easy to check whether the meat is done: pierce it with a knife in the thickest part. If clear juice runs out, the meat is ready. If the meat is not yet done but the cheese is starting to brown, cover the dish with foil.
