Baked Chicken Fillet with Frozen Vegetables and Cheese

A fairly quick dish made from the most affordable ingredients! An easy recipe for a budget-friendly, hearty meal of diced chicken breast baked with vegetable mix, tomatoes, and cheese that will surely please many and pleasantly surprise with its excellent taste!

Preparation
Step 1
First, prepare the necessary ingredients and spices for this budget-friendly homemade oven dish.
Step 2
Start by making the sauce. In a deep bowl, crack 2 eggs, add ½ teaspoon of salt, and whisk until smooth.
Step 3
Add 1 teaspoon paprika, ½ teaspoon khmeli-suneli, ½ teaspoon ground black and red pepper mix. Stir everything together.
Step 4
Add 200 g (about 7 oz) of 15% sour cream and mix again.
Step 5
Add 1 tablespoon dried herbs (dill, basil, parsley). Stir - the sauce is ready.
Step 6
Cut 500 g (about 1.1 lb) chicken fillet into small pieces. Place evenly into a baking dish.
Step 7
Take 500 g (about 1.1 lb) frozen vegetable mix, thaw it on the lower shelf of the fridge.
Step 8
Spread the thawed vegetables (peas, beans, bell pepper, carrot, broccoli) evenly over the chicken.
Step 9
Pour the prepared sauce evenly over the chicken and vegetables.
Step 10
Slice 2 medium tomatoes into thin rings and layer them on top. Bake in a preheated oven at 200°C (390°F) for 30-35 minutes.
Step 11
Grate 100 g (about 3.5 oz) cheese on a fine grater. Sprinkle evenly over the dish and place it back into the switched-off oven for 5 minutes.

Remove the dish from the oven.

Divide the baked chicken with vegetables and tomatoes with cheese onto plates and serve.
