Baked Chicken Drumsticks with Rice

Preparation
Step 1
Use chilled chicken. You can take any parts of chicken: with bones or boneless, large or small - as you like! Use quality rice from a reliable brand, free of impurities. Both round-grain and long-grain rice work. I used to prefer long-grain, but now I often use round-grain, the kind usually used for pilaf.
Step 2
Rinse the rice thoroughly until the water runs clear. (Tip: leftover rice water is great for watering flowers.) Take a heatproof baking dish with high sides: rice will expand in volume, and the chicken will go on top. Spread the rice in the bottom of the dish.
Step 3
Pour in water so that it stands about ½ inch (1 cm) above the rice level.
Step 4
Wash the chicken well and cut into medium-sized pieces. I cut each drumstick into 3 parts.
Step 5
Place the chicken on top of the rice. Salt the water.
Step 6
Add minced garlic. I grate it on a fine grater, but you can chop it with a knife or press it through a garlic press. If you don’t have fresh garlic, you can use garlic powder. At this stage, you may also add herbs and spices — thyme, khmeli-suneli, paprika, or dried adjika.
Step 7
Bake in a preheated oven at 350°F (180°C) for 50 minutes. For the first 30 minutes, cover the dish with foil. Then remove the foil, drizzle the dish with oil, and finish baking until done. First, the rice will absorb all the liquid, then it will soak in chicken juices, becoming even tastier and more aromatic!

And that’s it - both the fluffy rice and the baked chicken drumsticks are ready. Very convenient to cook everything in one dish. Enjoy!
