Baked Cheese Pie with Kefir

A real masterpiece from everyday ingredients! Irresistible! This cheese pie is baked in the oven with kefir-based dough. It’s quick to make and perfect even for beginner cooks. Serve for breakfast or as a light dinner.

Preparation
Step 1
Take kefir and the egg out of the fridge in advance to let them come to room temperature — this will help the pie rise better. Depending on your flour quality, you might need slightly more or less.
Step 2
Grate the cheese using a medium grater. You can use any cheese: hard, semi-hard, or even soft like mozzarella. Just make sure it’s tasty, high quality, and melts well.
Step 3
Wash the herbs, dry them thoroughly, and finely chop. You can use any herbs you like or have on hand. I used young cilantro, but dill or green onions also work great.
Step 4
In a bowl, pour in the kefir, add salt and a pinch of sugar to balance the flavor. Crack in the egg.
Step 5
Use a fork to mix the wet ingredients until smooth. Add the grated cheese and chopped herbs. Reserve about 1/4 of the cheese for topping. Mix again.
Step 6
Sift the flour directly into the bowl — this removes impurities and oxygenates the flour, making the pie fluffier. Start by adding 2/3 of the total flour amount. Add more as needed. Add baking powder into the flour before mixing.
Step 7
Stir the batter. If it’s too runny, add more flour. If too thick, add a bit more kefir. The batter should be a little thicker than pancake batter. I ended up using less flour than expected.
Step 8
Take a suitable baking dish. Mine was about 9 x 5.5 x 2.5 inches (23×14×6 cm). Grease it lightly with vegetable oil. Pour in the batter and smooth the top.
Step 9
Sprinkle the reserved cheese over the top of the pie.
Step 10
Place the dish in a preheated oven at 350°F (180°C). Bake for 35–45 minutes. The exact time depends on your oven and the thickness of the pie. It should rise well and turn golden. Mine baked for 45 minutes.
Step 11
Let the finished pie cool slightly, cut into slices, and serve. Enjoy!
