Preparation
Step 1
Prepare all the necessary ingredients. Use fresh broccoli, the head should be bright green and firm to the touch. Of course, you can also use frozen broccoli, but in that case it should be thoroughly thawed and all the liquid drained off. Use large eggs, preferably farm eggs. Farm eggs differ not only in size, but also have a brightly colored yolk, which will give the finished dish a beautiful color.
Step 2
Wash the broccoli very well, because a lot of dirt can collect in the small florets, so pay special attention to this step. Cut off the stem and divide the broccoli into florets of the size you want. Do not leave them too large, the finished dish should still be easy to eat.
Step 3
Bring water to a boil in a saucepan, add a little salt, add the broccoli florets, and boil them for 2-3 minutes. Do not cook them too long, most of the goodness is preserved in raw or lightly cooked broccoli.
Step 4
Drain the water, put the broccoli in a sieve, and hold it under cold running water. This step is necessary to preserve the bright green color of the broccoli.
Step 5
Prepare an ovenproof dish for baking. Arrange the broccoli in it. Keep in mind that if food tends to stick to your dish, grease it beforehand with a little vegetable oil or butter.

Lightly beat the eggs with a fork.

Add salt. At this stage, you can also add your favorite spices and seasonings to the egg mixture. For some, just ground pepper or paprika will be enough, while others may want to add garlic powder, herbes de Provence, or fenugreek. Or you may decide to add fresh herbs such as dill, parsley, or cilantro, or a clove of fresh garlic or some onion.
Step 8
Add half of the grated cheese to the egg mixture. The cheese can be any kind: hard, semi-hard, or even blue cheese. Mix well.
Step 9
Pour the resulting mixture over the broccoli.

Sprinkle the remaining grated cheese on top. Bake in an oven preheated to 180°C (350°F) for 15-20 minutes. The eggs should cook through and hold their shape well, and the cheese should melt.
