Baked beef with pumpkin

Beef can be replaced with any other meat you prefer. Keep in mind that cooking time, flavor, and calorie content will vary. Pork and lamb are usually fattier than beef, while chicken breast or turkey are leaner.
Preparation
Step 1
First, prepare all the listed ingredients. You may replace beef with veal. You can also add more vegetables to your taste. Replace water with meat or chicken broth, or substitute part of the liquid with white wine.
Step 2
Cut the beef (boneless and without tough sinews) into portion-sized pieces. Wash and pat the meat dry with paper towels - excess moisture will prevent proper browning. You can use meat from any part; this recipe uses the hip cut.
Step 3
Peel the pumpkin and cut it into large pieces, slightly smaller than the meat chunks.
Step 4
In a skillet over medium heat, warm some vegetable oil. Add the pumpkin and sauté, stirring, for about 3 minutes. It should soften slightly but keep its shape. Transfer to a bowl.
Step 5
In the same skillet, sear the beef over high heat until browned. Then transfer it to the bowl with the pumpkin.
Step 6
Sprinkle the beef and pumpkin with coriander and paprika. Season with salt and pepper. Mix well.
Step 7
Transfer everything into a baking dish. Pour in hot water or broth. Place rosemary sprigs on top.
Step 8
Cover the dish with a lid or foil and bake in a preheated oven at 350°F (180°C) for 15-20 minutes. Then remove the foil and bake for another 15 minutes or until the beef is tender.

Sprinkle the baked beef and pumpkin with fresh parsley and serve. Enjoy your meal!
