Preparation
Step 1
Choose firm, large apples, preferably those that keep their shape when baked. Tart varieties like Granny Smith work especially well.

Wash and dry the apples. Cut off the tops and scoop out the core and seeds with a spoon, leaving about ½ inch (1 cm) thick walls - forming “apple cups.” You can bake the tops along with them or save them for compote (together with the removed pulp).

Prepare the walnuts. If using shelled nuts, peel them first. For a richer flavor, lightly toast them in a dry skillet, then chop coarsely using a knife, blender, or mortar and pestle. Avoid overgrinding - leave small chunks.

Rinse and dry the raisins (optional). Combine walnuts, raisins, and natural honey in a bowl. If the honey is thick, warm it slightly in a water bath until liquid.

Fill the hollowed apples with the nut-honey mixture and place them in a heatproof baking dish. Pour about ½ inch (1 cm) of water into the bottom. Optionally, sprinkle ground cinnamon over the apples. Preheat the oven to 350°F (180°C), using both upper and lower heat.
Step 6
Bake for about 30 minutes. The exact time may vary depending on your oven and apple type. Once done, remove the apples and serve warm or chilled - they’re delicious either way. Enjoy!
