Preparation
Step 1
You can use any minced meat: pork, beef, or mixed. Poultry mince such as turkey or chicken also works. I used lean ground beef. Mayonnaise can be replaced with thick sour cream.
Step 2
Grate the cheese on a medium or fine grater. Choose the type of cheese you like - regular, mozzarella, suluguni, etc.
Step 3
Peel and finely dice the onion. If you or your kids don’t like onions, you can skip this ingredient.
Step 4
Finely chop the greens. You can also use other herbs like dill, green onions, or cilantro, or mix different herbs.
Step 5
In a bowl, combine minced meat, onion, half of the grated cheese, mayonnaise, and herbs. Add salt, pepper, and other spices to taste (for example, a meat spice mix or khmeli-suneli). Leave the mixture to rest for 30 minutes.
Step 6
Prepare the bagels (sushki). It’s best to choose round, even, and not too thin ones.
Step 7
Warm the milk over low heat or in the microwave until lukewarm, then pour it into a bowl.
Step 8
Place the bagels in the milk and leave to soak for 5-10 minutes. They should soften but not lose shape. Depending on the brand, soaking time may vary, so watch closely.
Step 9
Transfer the slightly softened bagels to paper towels and let them sit for a few minutes to absorb excess milk.
Step 10
Line a large baking dish with foil, grease with vegetable oil, and arrange the bagels in a single layer.
Step 11
Fill the bagels with minced meat. I rolled small balls of meat and pressed them into the centers. Place the dish in a preheated oven at 180°C (350°F) for 15 minutes. If your oven has a “top + bottom” mode, use it.
Step 12
Sprinkle the bagels with the remaining grated cheese and return to the oven for another 10-15 minutes until the cheese melts. Serve and enjoy!
