Bacon and cheese twists

These savoury bacon and cheese pastry twists are the perfect golden-baked snack or party nibble - crisp, cheesy, and packed with flavour. Easy to make ahead and serve warm or at room temperature.

Preparation
Step 1
Line a baking tray with greaseproof paper and set aside.
Step 2
On a lightly floured surface, roll out the pastry into a large rectangle about 0.5cm thick. Position the pastry so the longest side is closest to you.
Step 3
Spread a layer of mustard across the surface, then sprinkle evenly with cheese and season generously with freshly ground black pepper. Lay slices of bacon across the pastry, leaving a small gap between each piece.
Step 4
Using a sharp knife, cut the pastry between each strip of bacon. One at a time, twist each piece 4-5 times to form a spiral shape, resembling a curly straw, and place them onto the prepared baking tray.
Step 5
Continue twisting until all the bacon and pastry are used. Transfer the tray to the fridge and chill the twists for 15-20 minutes.
Step 6
Preheat the oven to 220C.
Step 7
Remove the chilled twists from the fridge and brush them lightly with beaten egg. Lower the oven temperature to 200C and bake for 20-25 minutes, or until the pastry is puffed, golden, and crisp.
Step 8
Take the tray out of the oven and leave the twists to cool before serving.
