Azu with Beef Fillet and Potatoes Tatar-Style

Preparation
Step 1
First, prepare all the ingredients and spices needed to cook this hearty Tatar-style dish.
Step 2
Cut 350 g (about 12 oz) of beef into strips about ½ inch thick and 1½ inches long.
Step 3
Take a heavy-bottomed pot or deep pan, add 3 tbsp vegetable oil, heat well, then add the beef. Stir and fry over high heat.
Step 4
Slice 2 large onions into half-rings, add to the pot, stir, and fry with the meat until the onions turn translucent.
Step 5
Cut 1 medium carrot into small chunks, add to the pot, stir, and fry for about 2 minutes over high heat.
Step 6
Grate 2 pickles on a coarse grater.
Step 7
Add the grated pickles to the pot, stir, and continue frying.
Step 8
Pour in 1¼ cups (300 ml) beef broth, stir, cover with a lid, and simmer for about 40 minutes over low heat.
Step 9
Peel and cut 700 g (about 1½ lbs) of potatoes into medium-thick sticks. Place them in a skillet with preheated vegetable oil.
Step 10
Fry the potatoes for 9 minutes without stirring, then stir and fry for another 10 minutes until golden.
Step 11
Add 1 tbsp tomato paste (or substitute with chopped tomato) to the pot, stir, cover, and simmer another 20 minutes.
Step 12
After that, season with salt to taste, ½ tsp paprika, ½ tsp ground pepper mix, and 2-3 pressed garlic cloves. Stir well.

Add 2 bay leaves and dried herbs of choice, then stir again.

Transfer the fried potatoes into the pot, stir, cover, and cook together for about 7 minutes.

Serve the Tatar-style beef and potato dish hot, portioned onto plates.
