Avocado toast with radishes

A vibrant and refreshing twist on avocado toast, topped with quick-pickled radishes, red onion, and fresh dill. Perfect for a light lunch or brunch.

Preparation
Step 1
Slice the radishes into very thin slices and place them into a mixing bowl.
Step 2
In a separate smaller bowl, combine the lime juice (reserving 2 tablespoons), sugar, finely sliced red onion, oil, and chopped dill. Stir well to combine, then pour the mixture over the radishes and toss gently to coat. Let the mixture sit for just 10 minutes to allow the flavours to infuse.
Step 3
While the radishes are marinating, toast the bread slices to your desired level of crispness.
Step 4
In a bowl, mash the avocados with the reserved lime juice to help prevent browning. Spread the mashed avocado generously over the toasted bread and season with a pinch of black pepper.
Step 5
Drain the marinated radishes and onions in a colander to remove any excess liquid. Arrange them neatly over the avocado toast and serve immediately.
