Avocado Rolls

Delicious, beautiful, healthy, for the whole family! Avocado Rolls - a recipe that clearly explains how to prepare a favorite dish at home. The process is so simple that even a beginner can handle it. Only two ingredients are used for the filling - fish and avocado.

Preparation
Step 1
Use special sushi rice. If you can’t find it, use regular round, non-parboiled rice. Instead of rice vinegar, you can use white wine vinegar.
Step 2
Start by cooking the rice. I recommend measuring it with a cup for easier water calculation. Place the rice in a saucepan and rinse very thoroughly until the water runs clear - this removes starch and prevents it from turning mushy. Add cold clean water in a ratio of 1:1.5. For 1 cup of rice, add 1 ½ cups of water.
Step 3
Cover the saucepan with a lid and bring to a boil. Once boiling, reduce heat to low and cook for 10-13 minutes, until all the water is absorbed. Remove from heat and let it sit, covered, for another 10 minutes.
Step 4
Meanwhile, prepare vinegar seasoning. In a small saucepan, combine salt, sugar, and vinegar. Heat gently until hot and the crystals dissolve.
Step 5
Transfer the rice to a large bowl. Pour the hot vinegar mixture over it. Gently fold the rice with a spatula a few times without stirring too much, to avoid sticking. Let it cool.
Step 6
Prepare the filling. Cut the avocado in half, remove the pit, peel, and slice the flesh into long sticks.
Step 7
Slice the fish into sticks of the same size as the avocado. Salmon, trout, chum salmon, or pink salmon are suitable.
Step 8
When the rice has cooled enough to handle, start rolling. You’ll need a bamboo mat (or a straw placemat wrapped in plastic wrap). Place a nori sheet shiny side down. With wet hands, spread rice in a thin layer, leaving about ½ inch (1.5 cm) free on one edge. Keep wetting your hands to prevent sticking.
Step 9
Spread a thin line of wasabi across the middle of the rice. I used horseradish with wasabi, so I spread more. If using pure wasabi, be careful - it’s very strong.
Step 10
Place avocado and fish sticks on top. Moisten the free edge of nori with water.
Step 11
Using the bamboo mat, carefully roll into a tight log.
Step 12
With a sharp knife dipped in water, cut the roll into 6 or 8 pieces. Repeat with two more rolls.
Step 13
Serve with soy sauce and pickled ginger. Enjoy!
