Asparagus tart with honey mustard dressing

This golden asparagus tart combines crisp puff pastry with a creamy herbed filling and a zesty honey-mustard drizzle. Elegant yet simple, it’s a perfect dish for brunch, lunch, or a light spring dinner.

- tablespoon - 20 ml

Preparation
Step 1
Preheat the oven to 200C. Lay out the puff pastry sheet on a baking tray, keeping it on the baking paper it came with.
Step 2
With a sharp knife, score a 2cm border around the edge of the pastry, creating a frame. Make sure the asparagus you’re using fits neatly within this scored area.
Step 3
In a small bowl, mix together the sour cream, lemon zest, and chopped chives. Season lightly with salt and pepper. Spread this mixture evenly inside the scored lines of the pastry, being careful not to go over the edges.
Step 4
Neatly arrange the trimmed asparagus spears on top of the sour cream layer, nestling them closely together. Drizzle with olive oil and scatter pine nuts over the top.
Step 5
Brush the outer border of the pastry with beaten egg and sprinkle Parmesan cheese generously along the edges.
Step 6
Bake in the preheated oven for 20-35 minutes, or until the pastry is puffed up and golden brown.
Step 7
While the tart bakes, prepare the dressing by whisking together wholegrain mustard, honey, olive oil, and apple cider vinegar in a small bowl.
Step 8
Once the tart is baked and still warm, drizzle it with the honey and mustard dressing just before serving.
