Arugula, Pear, and Blue Mold Cheese Salad
A lovely salad for a girls’ night or catching up with friends! Light and tasty with a glass of champagne or sparkling semi-dry white. So appetizing and vibrant thanks to the combo of blue mold cheese, pear, and salad leaves. Do try it!

Step 1
How to make a pear-and-cheese salad? Prepare all the ingredients from the list. Visually divide everything into two parts, because the salad layers will be repeated twice.
Step 2
Rinse the arugula in cold water and pat dry with paper towels to remove excess moisture. Arrange the leaves in a thin layer on a flat serving plate.
Step 3
Peel the onion, rinse, and slice into thin strips or half-rings. For this salad, milder onions work best: red onion, shallot, or white onion. Add it over the arugula.
Step 4
Wash the pear and cut it in half. Remove the core and seeds. Slice the pear thinly and add as the next layer. Drizzle with freshly squeezed lemon juice so the pieces don’t darken and stay appetizing.
Step 5
Add the blue mold cheese as the next layer, cut or crumbled into small pieces by hand.
Step 6
Heat a dry skillet and toast the pine nuts. Stir so they don’t burn. Usually just a few seconds over high heat is enough.
Step 7
Sprinkle half of the nuts over the salad.
Step 8
Repeat all the layers once more: arugula, then onion, pear (drizzle with lemon juice), cheese, and nuts.

Salt the salad if needed. I usually don’t - cheese and lemon are enough for me. Drizzle with a small amount of olive oil.
Step 10
Pepper to taste. I used allspice and ground red pepper.

Toss the salad on your plate and enjoy the unusual flavor!
