Apricot Jam with Apricot Kernel Nuts

Step 1
First, prepare all necessary ingredients for the apricot jam using seasonal apricots.
Step 2
Wash the apricots thoroughly, cut them in half, and remove the pits. You should have 2 kilograms of clean fruit. Place the apricot halves cut-side up in a washed enamel basin in layers.
Step 3
Alternate layers of apricot halves with 1.5 kilograms of sugar. Set aside and let the sugar fully dissolve for 4-5 hours.

After five hours, stir the apricots several times in the sugar syrup. Dissolving time depends on the ripeness and variety of apricots.
Step 5
Place the basin on the stove on high heat. Add lightly roasted apricot kernels from pre-split pits and stir well to prevent burning.
Step 6
Do not remove the foam from boiling jam. Add 1 teaspoon of butter, stir, and boil for exactly 5 minutes on high heat.
Step 7
Remove the basin from heat and let the jam sit for 15 minutes.
Step 8
Stir the jam and return it to the stove. Bring to a boil and cook for 3 minutes, then remove for another 15 minutes.
Step 9
Boil the jam a third time, add ½ teaspoon of citric acid, stir, and boil for exactly 3 minutes.

Remove from heat and fill sterilized jars to the top with the hot jam.
Step 11
Seal jars tightly with new sterilized lids, invert them to check for leaks, and cover with a warm blanket for several hours.
Step 12
Serve the apricot jam with whole kernels in deep dishes or bowls.
