Apricot and Cherry Compote for Winter

Preparation
Step 1
Choose only the best fruits for preserving. They should be fresh, ripe but firm enough to hold their shape in the compote. Avoid any damaged or spoiled apricots or cherries.
Step 2
You can make the compote in three 1-liter jars or one 3-liter jar. Wash the jars thoroughly using detergent or baking soda, then rinse several times with running water. Sterilize the jars using your preferred method - in the oven, microwave, or over steam.
Step 3
Remove stems and leaves from the cherries. Wash both apricots and cherries thoroughly and let them drain in a colander. Cut each apricot in half and remove the pits.
Step 4
Place the apricot halves and cherries into the sterilized jars.
Step 5
Separately, boil clean water. Pour the boiling water into the jars, cover them with lids, and let sit for 15 minutes. During this time, the fruits will warm through and self-sterilize.
Step 6
After 15 minutes, pour the water from the jars into a pot and place it on the stove.
Step 7
Add sugar to the drained water and bring it to a boil. Boil for one minute to fully dissolve the sugar. Separately boil the lids to sterilize them.
Step 8
Pour the boiling syrup back over the apricots and cherries in the jars. Seal the jars with lids. Turn the jars upside down to check for leaks. Wrap the compote jars in a warm blanket and let them cool completely. Once cooled, store them in a cool, dark place like a cellar or basement. Enjoy!
