Apple Pie with Yeast-Free Kefir Dough

Quick baking from the most affordable ingredients! A very simple recipe for a sponge-like apple pie made from yeast-free kefir dough in the oven. A guaranteed crowd-pleaser with excellent taste!

Preparation
Step 1
Prepare all the ingredients for a homemade apple pie. In a large bowl, crack two eggs, add a pinch of salt, and beat until smooth.
Step 2
Add 150 g (¾ cup) of sugar to the eggs in two batches. Beat with a mixer for 7-10 minutes until the mixture becomes light and fluffy.
Step 3
Add 50 ml (3 ½ tbsp) of vegetable oil, 150 ml (about ⅔ cup) of room temperature kefir, and 1 tsp of vanilla sugar to the egg mixture.
Step 4
Mix all ingredients on low speed with a mixer for 2-3 minutes until smooth.
Step 5
Using a fine sieve, sift in 175 g (1 ⅓ cup) of all-purpose flour and 25 g (2 tbsp) of potato starch. Then add 1 tsp of baking powder and ½ tsp of baking soda.
Step 6
Mix on low speed until a smooth dough forms. Let the batter rest for 10 minutes.
Step 7
Core 4 small fragrant apples. Slice 3 of them into thin wedges about 2–3 mm thick.
Step 8
Grease a suitable baking dish with 1 tsp of butter, sprinkle with semolina, shake to coat evenly, and layer the apple slices tightly.
Step 9
Pour the rested batter over the apples and spread it evenly.
Step 10
Thinly slice the remaining apple into rings and place them on top of the batter. Mix 1 tsp of sugar with ⅓ tsp cinnamon and sprinkle over the apples.
Step 11
Place the pie in a preheated oven at 180°C (350°F) and bake for 35-40 minutes. Then turn off the oven, open the door slightly, and let the pie rest for 5-7 minutes. Remove and take it out of the form.
Step 12
Brush the baked pie with a mixture of 1 tsp honey and 1 tsp softened butter.
