Apple Pie with Rice Flour and Kefir

Preparation
Step 1
Take butter out of the fridge in advance so it softens. Kefir should not be cold either. Use medium-sized sweet-sour apples.
Step 2
Mix rice flour with baking powder and sift. Sifting enriches the flour with oxygen, helping the pie rise and become fluffy.

Separate whites from yolks carefully, avoiding any yolk in the whites (or they won’t whip properly).
Step 4
Beat softened butter with cane sugar and vanilla sugar using a mixer until fluffy and smooth.

Add yolks gradually (2 at a time), beating well after each addition.
Step 6
Pour in kefir and whisk lightly again.
Step 7
Add sifted flour with baking powder. Mix with a spatula or mixer until smooth, with no lumps.
Step 8
Wash and dry the mixer whisks thoroughly to remove any grease. Beat the whites: start at low speed until foamy, then increase speed until stiff peaks form.

Gently fold whipped whites into the batter in parts, mixing with a spatula.

The batter should be thick, viscous, and uniform.

Wash and dry apples. Dice some for inside the pie, slice the rest for topping. Peel if the skin is too thick. Sprinkle with lemon juice to prevent browning.

Line the bottom of a 20-22 cm (8-9 inch) baking pan with parchment. Grease the sides with neutral oil. Spread half of the batter evenly.

Distribute diced apples evenly on top.

Spread the remaining batter over the apples and smooth.

Decorate the top with apple slices. Either press them lightly into the batter or arrange like a fan.

Bake in a preheated oven at 180 °C (355 °F) for about 50 minutes. Rice flour bakes longer than wheat flour. Test doneness with a toothpick - if it comes out dry, the pie is ready. Cool slightly in the pan, then remove and let cool completely.
