Apple muffins with toffee

Preparation
Step 1
Preheat your oven to 190 C and line a 12-hole muffin tin with paper cases.
Step 2
In a large bowl, whisk together the eggs, sugar, milk, and melted butter until fully combined.

Sift in the flour, baking powder, salt, and cinnamon, stirring until the batter is smooth. Gently fold in the chopped apple.
Step 4
Spoon half of the batter into the muffin cases, filling each about a quarter full. Drop a few pieces of toffee on top, then cover with the remaining batter so each case is half full.
Step 5
Bake in the preheated oven for 30-35 minutes, or until the muffins are well risen and golden brown. Let them cool on a wire rack. Serve warm or cold, as you prefer.
