Apple Muffins “Charlotte” Cupcakes

Step 1
How to make “Charlotte” cupcakes? Prepare all the necessary ingredients. Use any neutral (odorless) oil. Take the eggs out of the refrigerator 1.5 hours ahead of time - eggs must be at room temperature for the batter to turn out well. Choose medium apples. You can make powdered sugar yourself by grinding sugar in a coffee grinder.
Step 2
Rinse the apples, pat dry with a towel, and remove the cores and seeds. Cut into small cubes. Preheat the oven to 180°C (356°F) so it has time to heat up.
Step 3
Take a deep bowl that’s convenient for mixing the wet and dry ingredients. Crack the eggs into the bowl. Add sugar and vegetable oil. Beat with a mixer or whisk. You must beat until pale and fluffy so the cupcakes turn out light and airy.
Step 4
Sift the flour into a separate bowl to remove any fine debris and to aerate it. Add baking powder and mix so it’s evenly distributed.
Step 5
Add the flour to the wet mixture little by little, folding gently with a spoon or spatula in one direction so you don’t deflate the whipped eggs.
Step 6
You may need a little more or less flour - go by the batter’s texture. Add flour until the batter is as thick as very thick sour cream.
Step 7
Divide the apples into 2 parts. Set one part aside for the muffin “tops.” Add the second part to the batter and mix well so the apples are evenly distributed.
Step 8
Use muffin molds for baking - silicone (like mine) or paper liners don’t need greasing. If your molds are made of another material, lightly grease them with oil. Fill the molds 2/3 full. Arrange the remaining apples on top and press them slightly into the batter. Bake for about 30 minutes at 180°C (356°F). The time is approximate and depends on your oven and mold size. The finished cupcakes will rise and turn golden.
