Preparation
Step 1
Choose sweet or sweet-and-tart apples. Adjust the sugar to taste, depending on the apples’ sweetness.

Wash the apples, peel them, and remove the cores. Cut them into medium-sized pieces.
Step 3
Place the chopped apples into a saucepan, cover with water, and bring to a boil. Cook over medium heat until the apples are soft.
Step 4
Remove the saucepan from the heat and carefully, using an immersion blender, puree the apples until smooth.
Step 5
Add sugar to the apple puree, stir, and bring back to a boil. Instead of sugar, you can use a heat-stable sugar substitute, making the mousse suitable for diet-friendly meals.
Step 6
Gradually sprinkle the semolina into the saucepan in a thin stream, stirring constantly to prevent lumps. Cook the semolina for about 5 minutes, stirring continuously. Cinnamon may be added if desired.
Step 7
Let the apple mixture cool slightly to a warm (but not hot) temperature.
Step 8
Beat the mixture with a mixer until fluffy, continuing until it cools completely. You can place the bowl inside a larger bowl filled with cold water, replacing the water as it warms.
Step 9
During whipping, the apple mixture will become lighter in color, increase in volume, and turn into airy mousse.
Step 10
Spoon the mousse into dessert bowls or glasses and chill to set for a firmer texture. You can also serve it immediately without chilling. Enjoy!
