Preparation
Step 1
Prepare the ingredients and everything you need. Wash the jar with baking soda and sterilize it.
Step 2
The amounts of apples and water are approximate and will depend on the juiciness of the apples and how concentrated you want the compote. Choose medium-size apples, not too large.
Step 3
Fill the jar halfway with apples (I filled it a bit more than half - this compote can be diluted in winter). In my view, the minimum is 1/3 of the jar’s volume.
Step 4
Now boil water and pour boiling water into the jar with apples up to the top. Leave the jar with apples to infuse overnight.
Step 5
The next day, the water level will be lower because the fruit will absorb some water (how much depends on how juicy or dry the apples are). Top up with boiled water to the very rim.
Step 6
Pour this water into a pot. Add sugar to this liquid and bring the syrup to a boil. You can adjust the sugar to about 200-300 g (7-11 oz) depending on the apple variety (tart or sweet) and the amount of fruit.
Step 7
Pour the boiling syrup over the apples and seal the jar with a metal lid.
Step 8
Turn the jar upside down, wrap it in a warm blanket, and leave it like that until completely cool. Then store the jars in a cool place: a cellar or pantry. After about a month, the compote can be opened and enjoyed.
