Apple Cobbler with Buckwheat Flour
My ideal tasty and healthy fall/winter dessert. The combo of apples with sweet spices - cinnamon and ginger - always feels warm and festive. The deep flavor of coconut sugar and whole green buckwheat flour is a perfect base.

Preparation
Step 1
Preheat the oven to 350°F (175°C). Put solid coconut oil into a baking dish (best 6×10 in / 15×25 cm, mine is about 9×12 in / 22×30 cm) and place it in the oven to melt the oil and heat the dish.
Step 2
While the dish is heating, in a small bowl mix diced apples, cinnamon, and ginger. The size of the pieces is up to you, but try not to cut them too small.
Step 3
In a large bowl combine buckwheat flour, coconut sugar, and baking powder.
Step 4
Pour in soy milk and mix everything well.
Step 5
Remove the hot dish with the melted oil from the oven. Stir the batter in the bowl once more, then pour it into the dish.
Step 6
DO NOT MIX THE BATTER WITH THE OIL IN THE DISH - this is important for a great result.
Step 7
Evenly spread the apples on top and again: do not stir.
Step 8
Return the dish to the oven at 350°F (175°C) for 40 minutes. Watch for doneness - you may need a bit less or a bit more time depending on your oven. The batter should turn golden and hold its shape well.
Step 9
Serve with ice cream, cream, or drizzle with your favorite syrup if you’re a serious sweet tooth. And of course, serve it simply as a stand-alone dessert. Enjoy.
