Apple Charlotte with Rice Flour
This tender apple charlotte is made with rice flour and honey instead of wheat flour and sugar. The preparation is simple and very similar to a classic apple sponge cake.

Preparation
Step 1
Prepare the ingredients. For a fluffy sponge, bring the eggs to room temperature beforehand. If necessary, place them in warm water for a short time. The amount of flour is approximate, so adjust it according to the consistency of the batter.
Step 2
Crack the eggs into a bowl, add the honey and begin beating with an electric mixer on low speed. Once foamy, increase the speed and beat for approximately 5 minutes, until pale and fluffy. If desired, replace the honey with a heat-stable sweetener or sweet dried fruit.
Step 3
Mix the rice flour with the baking powder, then sift the mixture to remove lumps and aerate it.
Step 4
Add the flour mixture to the beaten eggs in batches, gently folding from the bottom upward after each addition. Stop adding flour once the batter reaches the consistency of thick sour cream. You may not need all of the flour.
Step 5
Cut the apples into pieces of your preferred size. They can be left unpeeled if desired.
Step 6
Add the apples to the batter and gently mix. You can use more apples depending on their size and your preference.
Step 7
Grease a baking dish lightly with vegetable oil, then dust the bottom and sides with a little rice flour and shake out the excess. A silicone mold does not need to be greased. The original recipe uses a 7-inch glass baking dish.
Step 8
Pour the batter into the prepared dish and smooth the top.
Step 9
Bake in an oven preheated to 350°F for 30–40 minutes. Check for doneness with a wooden skewer inserted into the center; it should come out dry. Allow the cake to cool, then remove it from the dish.
Step 10
Serve the apple charlotte with rice flour.
