Apple and Orange Compote

Preparation
Step 1
The number of apples and oranges can vary depending on their size - use more small fruits and fewer large ones. Adjust to your taste. Choose aromatic apple varieties for better flavor. Adjust sugar to taste.

Take a pot suitable for compote. Enamel or stainless steel is best. Avoid aluminum as citrus juice can oxidize metal. Pour in cold clean water and place over high heat. While water heats, prepare the fruits. Wash thoroughly under running water using baking soda and a scrub sponge to remove any wax coating.
Step 3
Cut apples into quarters, remove cores and stems, then cut quarters into slices. Peel oranges, removing only the zest (the upper layer of skin) without touching the bitter white pith - a vegetable peeler works well.
Step 4
Squeeze juice from oranges using a juicer or any other method. If fruits have seeds, strain the juice to remove them.
Step 5
Add sliced apples, orange zest, and sugar to the boiling water. Stir and let simmer gently on low heat for 10 minutes. Cover with a lid.
Step 6
After simmering, pour orange juice into the compote, stir, and turn off the heat. Let the compote cool covered.
Step 7
Pour the finished compote into a glass container and refrigerate. Serve chilled. Enjoy!
