Apple and Currant Compote for Winter

A quick, simple, and tasty summer drink for all seasons! Apple and currant compote for winter preserves many healthy vitamins. It’s easy to prepare and loved by both kids and adults. This recipe makes three 1-liter jars or one 3-liter jar.

Preparation
Step 1
The proportions for the compote are approximate. You can use slightly more or fewer apples and berries. Use ripe apples - any variety will do. The more tart the apples, the more sugar you'll need to balance the taste. I used sweet apples with a slight tang. Remove stems and leaves from the currants.
Step 2
Wash the apples thoroughly to remove any dirt, then place them on a towel to absorb excess water. Rinse the currants in cold water and drain them in a colander.
Step 3
Remove the cores from the apples and cut out any bad spots if present.
Step 4
Wash the jars with dish soap and rinse thoroughly several times with running water. Place the sliced apples and currants into the prepared jars. You can use black currants, red currants, or a mix of both.
Step 5
Separately, bring water to a boil. Pour the boiling water into the jars all the way to the top. Cover with lids and let them sit for about 15 minutes.
Step 6
Then, pour the infused berry water from the jars into a separate pot. Add sugar to it. Bring it to a boil, stirring until the sugar fully dissolves. Let it boil for about 1 minute.
Step 7
Pour the boiling syrup back into the jars, filling them to the top. Seal with sterile lids (you can pre-boil them for a couple of minutes). Turn the jars upside down and check for leaks. Wrap them in a blanket and let them cool completely. Store the cooled compote in a cellar or basement. Enjoy your winter treat!
