Apple and Cinnamon Pie

Step 1
How to make apple and cinnamon pie? Prepare all ingredients from the list. Sift the flour with salt to aerate it. The butter should be firm - you can even chill it slightly. Put the water for the dough in the refrigerator ahead of time so it becomes ice-cold.
Step 2
The very firm butter needs to be shredded. Grate the butter on a coarse grater, alternating with sprinkling it with flour.
Step 3
Mix the butter and flour with a wooden spatula until you get crumbs. Then pour in the ice-cold water and quickly knead the dough. Do this with a wooden spatula; only at the end help a little with your hands so it comes together into a ball. Do not knead fully by hand, otherwise the butter will start melting from the warmth of your hands.
Step 4
Keep in mind you may need a bit more or less flour than I did. Go by how the dough looks. The finished dough will be firm and not completely uniform. Wrap it in plastic wrap and refrigerate for 2 hours.
Step 5
For the filling, wash the apples, cut them, and remove the cores. Dice the apples. Add melted butter, sugar, and cornstarch to the apples. For aroma, add a little ground cinnamon. Mix everything together.
Step 6
Divide the dough into two unequal parts. Roll the larger part into a circle and spread it over the bottom of a springform pan, forming tall sides. My pan is 22 cm (about 8.7 in).
Step 7
Place all the prepared apple filling onto the dough.

From the remaining dough, cut strips and arrange them on top of the pie in a lattice pattern. Brush the pie with egg yolk. Bake in a preheated oven at 180°C / 356°F for about 50-60 minutes. Adjust to your oven.
Step 9
The finished pie will turn an appetizing golden color. Remove the pie from the oven. Let it cool in the pan so the apple filling can set.
Step 10
Remove the cooled pie from the pan and serve.
