Appetizer Salad with Cabbage, Onion, and Beetroot

Preparation
Step 1
Prepare the necessary products and spices for making a delicious marinated vegetable appetizer salad.
Step 2
Make the marinade: put 2 tablespoons sugar, ½ tablespoon salt, 50 ml unrefined vegetable oil, 50 ml 6% balsamic vinegar, and 200 ml water into a saucepan.
Step 3
Place the saucepan on the stove, stir well to combine all the ingredients, and bring to a boil.
Step 4
Shred 500 g (about 1 lb) fresh white cabbage into thin strips.
Step 5
Transfer the cabbage into a large bowl.
Step 6
Roughly chop 1 onion.
Step 7
Add the chopped onion to the bowl with cabbage.
Step 8
Grate 1 fresh beetroot on a coarse grater into the bowl.
Step 9
Also grate 1 fresh carrot on a coarse grater into the bowl.
Step 10
Mix all the vegetables thoroughly until evenly combined.
Step 11
Pour the hot marinade from the saucepan over the vegetables in the bowl.
Step 12
Cover the vegetables with a plate that fits inside the bowl.
Step 13
Place a weight (a container filled with water) on top of the plate and refrigerate for 24 hours, ideally 48 hours.
