In order to make smooth nut butter, you need to use really powerful and good quality blender, as it has to work for longer. More simple blenders will overheat and break.
Preparation
Step 1
Preheat the oven to 180C. Spread the almonds out on a baking tray and roast for 12 minutes, or until they are lightly toasted and fragrant - watch closely to prevent burning. Allow them to cool for about 10 minutes.
Step 2
Once cooled, transfer the almonds to a food processor. Begin blending, and you’ll notice the almonds break down in stages - first into rough pieces, then into a finer meal, followed by a clumpy texture. Eventually, the oils will release and transform the mixture into a smooth, creamy paste. Be sure to stop and scrape down the sides occasionally to ensure even blending. Depending on your processor, this process can take anywhere from 7 to 15 minutes.
Step 3
Once the desired consistency is reached, season with salt to taste and give it one final blend to incorporate. Transfer the almond butter to a clean container, cover, and store in the fridge. For best flavor and texture, enjoy within two weeks.
