Air fryer mozzarella sticks

Crispy, golden, and gooey, these double-coated mozzarella sticks are air-fried to perfection - a crowd-pleasing snack that's crunchy on the outside and melty inside, without the mess of deep-frying.

Preparation
Step 1
It is best to use block of mozzarella, as it it more firm than the one packaged in whey.
Use panko breadcrumbs for crunchier crumb.
Step 2
Slice the mozzarella into strips about 1.5cm wide and blot them dry using kitchen paper.
Step 3
Set up three shallow dishes: combine the flour and garlic granules in the first; beat the egg with a generous pinch of salt and pepper in the second; and spread the breadcrumbs in the third.
Step 4
To coat, first roll each mozzarella strip in the flour, then dip in the egg. Repeat this process once more - flour followed by egg -to form a double coating. Be sure there are no gaps in the flour layer, as any exposed cheese could melt and leak during cooking. Finish by rolling each piece thoroughly in panko breadcrumbs.
Step 5
Transfer the coated mozzarella sticks to a tray and freeze for at least 30 minutes until fully solid.
Step 6
Preheat the air fryer to 200C. Spray the basket with olive oil spray and arrange the frozen mozzarella sticks in a single layer. Splash the tops with more oil and air-fry for 10 minutes, until golden and crisp. Work in batches if needed, keeping the cooked sticks warm until ready to serve. Enjoy immediately while gooey and hot.
