Air fryer cauliflower "wings"

Crispy air-fried cauliflower bites with a smoky paprika batter, tossed in hot sauce and served with a zesty, herby yogurt dip. A bold, satisfying snack or appetizer ready in minutes.

Preparation
Step 1
We recommend using oat-based yogurt for the dip, if you wish for this dish to be vegan.
Step 2
Preheat the air fryer to 200C. Cut the cauliflower into florets.
Step 3
In a mixing bowl, combine the flour, baking powder, paprika, salt, and pepper. Gradually whisk in 150ml of cold water until a thick batter forms. Dip the cauliflower florets into the batter, ensuring they’re well coated, and place them on a plate.
Step 4
Lightly spray the air fryer basket with oil. Arrange the coated florets in a single layer - it's fine if they’re touching, as they can be separated after cooking. Spray the tops with a little more oil and air-fry for 10 minutes, or until the florets are golden brown, crispy, and cooked through. You may need to work in two batches, depending on your air fryer size.
Step 5
While the cauliflower cooks, prepare the dip by mixing the yogurt, grated garlic, lemon zest and juice in a bowl. Stir in the chopped herbs and season to taste with salt and pepper.
Step 6
If the cauliflower was cooked in batches, return all the florets to the air fryer and heat together for 1 more minute.
Step 7
Place 2 tablespoons of hot sauce into a large bowl, add the freshly cooked cauliflower, and toss well to coat. Serve immediately, drizzled with an extra tablespoon of hot sauce if desired, with the herby yogurt dip on the side.
