Adjarian Khachapuri with Suluguni Cheese in the Oven

Original, beautiful, appetizing, and very tasty! Adjarian Khachapuri with Suluguni Cheese in the oven is one of the most popular Georgian dishes. It is an open boat-shaped pie filled with aromatic melted cheese. Surprisingly, it’s easy to make at home.

Step 1
Use milk of any fat content. Choose natural, high-quality cheese without vegetable fats. Vegetable oil should be refined and odorless.
Step 2
In a large bowl, sift the flour to aerate it for a fluffy dough. Add sugar, salt, and dry yeast. Mix. Warm milk to 37-38°C (98-100°F). Pour milk into flour while stirring with a fork, then add vegetable oil.
Step 3
Knead by hand. Oil your hands to prevent sticking. The dough will quickly become homogeneous and form a ball. Adjust flour as needed for desired consistency.
Step 4
Dough should be soft; don’t overdo the flour or khachapuri will be tough. Cover the dough and leave in a warm place for 1 hour. Punch down and leave another 30 minutes.
Step 5
While dough rises, prepare filling: grate the cheese coarsely.

Divide the cheese into two portions for two khachapuri.
Step 7
Dough should rise slightly more. Divide into two parts.

Dust the work surface with flour. Roll out one portion into an elongated rectangle, 5-7 mm thick.
Step 9
Place strips of cheese along the long edges.
Step 10
Fold edges over the cheese, pinch ends, and flatten the center to form a boat shape. Repeat for the second khachapuri.
Step 11
Line a baking tray with parchment. Place khachapuri apart as they will expand while baking.
Step 12
Place cheese in the center of each boat.

Melt a small piece of butter and brush the edges.

Bake in a preheated oven at 180°C (355°F) until golden, 15-20 minutes (adjust for your oven).
Step 15
Remove from oven. Make a small well in the center and pour in an egg yolk (or whole egg, baking 5 more minutes). Add butter around the yolk. Serve immediately.

One khachapuri serves two. Eat by hand, tearing pieces and dipping into melted cheese and yolk. Enjoy!
