5-Minute Banana Mug Cake
A quick microwave dessert for morning coffee or tea, made with just a handful of simple ingredients. The ripe banana keeps the cake soft, aromatic and slightly moist inside. This amount makes one large mug cake or two smaller portions.

Step 1
Prepare the ingredients. Choose a very ripe banana with dark spots, as it will be sweeter and more aromatic. This amount of ingredients makes one large mug cake or two smaller ones.
Step 2
Place the butter in a microwave-safe mug or bowl and melt it in 5-second intervals at medium power, approximately 500 W. Add the sugar and crack in the egg.
Step 3
Whisk with a small whisk or fork until smooth, then pour in the milk. Peel the banana and mash it with a fork. A few small pieces are fine and will add texture. Stir the mashed banana into the mixture.
Step 4
Mix the flour with the baking powder. Add the flour to the batter one spoonful at a time, stirring after each addition. Stop adding flour once the batter reaches the consistency of medium-thick sour cream; if it seems too thin, add a little more.
Step 5
Divide the batter between microwave-safe mugs, filling each no more than two-thirds full so the cake has room to rise. If cooking the entire amount in one mug, use a large 12–14 fl oz mug.
Step 6
Microwave at 800 W for 2–4 minutes or longer if necessary, depending on your microwave. Check for doneness with a toothpick inserted into the center; it should come out dry.
Step 7
Carefully remove the mug from the microwave, as it will be hot, and serve immediately. If desired, add ice cream, whipped cream or chocolate sauce.
