10-Minute Skillet Pizza with Sour Cream and Mayonnaise

How to make skillet pizza with sour cream? Prepare the ingredients. Start with the batter. Use 20% fat sour cream, not watery. Use all-purpose wheat flour.

In a bowl, combine sour cream, mayonnaise, and eggs, and whisk well until smooth.

Add the sifted flour. Mix again until smooth.
Step 4
Depending on how thick your sour cream and mayonnaise are and the size of the eggs, you may need more or less flour. Go by texture: you need a thick, sticky batter that still flows slightly.

Now make the sauce.

In a bowl, combine ketchup, mayonnaise, and spices.

Mix until smooth. You can replace ketchup with tomato paste.

Now the best part - the toppings. Drain the olives and pat them dry. Make sure there’s no moisture inside.

Wash the bell pepper and slice into rings or strips.

Slice the cooked sausage into small thin slices.

Slice the tomatoes into thin rounds. Since a skillet is smaller than a baking tray, use smaller tomatoes - plum tomatoes work best. Choose tomatoes that are juicy but firm. Very soft tomatoes won’t hold their shape and can turn mushy, ruining the look.

Grate the cheese on a coarse grater.

Pour the batter into a large skillet (26-30 cm / 10-12 in) greased with vegetable oil and spread it out evenly.

Spread the tomato sauce evenly over the batter, leaving 1 cm (about 1/2 in) clear around the edges.

Sprinkle grated cheese over the batter (you can reserve some cheese for the top later).

Arrange sausage, tomatoes, bell pepper, and olives over the surface. For extra flavor and color, I also added a little sliced green chili pepper - optional.

Place the skillet over low heat, cover with a lid, and cook for about 15-20 minutes. Adjust to your stove. After 10-15 minutes, check the crust; if needed, cook a bit longer.

Sprinkle the finished pizza with basil leaves, slice, and serve. Enjoy!
