Zucchini with Sausage and Cheese in a Pan

Preparation
Step 1
I have a young zucchini with soft skin, weighing just over 1 kg (about 2.2 lb). You can use any cheese as long as it’s easy to grate. Wash the zucchini, tomatoes, and onion well.
Step 2
Slice the zucchini into rounds about 1.5-2 cm (½-¾ inch) thick. Remove the core from each slice.
Step 3
Prepare two bowls for the batter. In one, beat 2 eggs; in the other, pour some flour.
Step 4
Cut the boiled sausage into small pieces. Grate the cheese. Slice the tomatoes into 0.5 cm (¼ inch) thick rounds.
Step 5
In a bowl with the chopped sausage, add 2 eggs, sour cream, and finely chopped green onion. Mix everything together.
Step 6
Dip each zucchini ring first in the egg mixture, then dredge it in flour.
Step 7
Heat a little vegetable oil in a skillet and add the zucchini. Cover with a lid and cook over low heat for 3-4 minutes.
Step 8
Flip the zucchini. The bottoms should be slightly golden brown.
Step 9
Spoon some sausage filling into the center of each ring, top with a tomato slice, and sprinkle with grated cheese. Cook for another 3-4 minutes. The zucchini will become tender, the tomato will soften, and the cheese will melt completely.
Step 10
Transfer the cooked zucchini onto a plate lined with paper towels to remove excess oil.
