Yeast Buns with Cottage Cheese
Incredibly tasty, airy, and tender buns with a juicy cottage cheese filling! The yeast dough is soft, elastic, and easy to shape. You can add fruits or dried berries.

Preparation
Step 1
Prepare ingredients for the dough. All should be at room temperature except milk, which can be any fat content. Warm the milk. Flour should be premium. Use any vegetable oil.

In a separate bowl, mix dry yeast, sugar, and warm milk. Let stand about 10 minutes.
Step 3
A foamy yeast “cap” should form, indicating active yeast. Replace yeast if it doesn’t foam.
Step 4
Sift wheat flour into a large deep bowl. The amount may vary; dough should be soft and elastic.
Step 5
Pour the yeast mixture into a deep bowl. Add raw egg, softened butter, vegetable oil, and salt. Mix well.
Step 6
Gradually add sifted flour and knead into a soft elastic dough. When it becomes difficult to mix with a spoon, knead by hand lightly oiled with vegetable oil.

Cover dough with a towel and leave to rise about 1 hour.

Punch down dough and cover again for another hour.

Prepare filling: use any fat-content cottage cheese that is not too crumbly. Sugar can be replaced with heat-stable sweetener.

In a separate bowl, mix cottage cheese with sugar and vanilla sugar until smooth.

Divide risen dough into 6-8 equal pieces.

Roll each piece into a rectangle. Place filling along the long edge and roll into a log.

Twist each log into a snail shape. Repeat with remaining dough.

Place buns on a parchment-lined baking sheet and let rest 25-30 minutes.

Prepare topping ingredients. You can use almond flakes, other nuts, or skip entirely.

Beat a raw egg with milk until smooth.

Brush the tops of buns with the egg-milk mixture and sprinkle with almond flakes.

Bake buns for about 25 minutes at 350°F (180°C). Adjust time and temperature according to your oven.

Sprinkle finished buns with powdered sugar. Serve and enjoy!
