Step 1
Use large eggs. Brown sugar can be replaced with white sugar. Kefir should be at room temperature (2.5% fat), so remove it from the fridge in advance. You can use strawberries, apples, or any other fruits or berries.

Wash the strawberries thoroughly, pat dry, and remove the stems. Cut the berries in half. Fresh strawberries work best because they contain less moisture than frozen ones. If using frozen berries, thaw them completely and drain all the juice.
Step 3
Sift both types of flour into a bowl, then mix with baking powder and salt. You can use only whole wheat flour, but the pie will be denser in texture, so mixing with all-purpose flour makes it lighter.
Step 4
Pour in the room-temperature kefir and mix thoroughly with a whisk until smooth and thick. The amount of flour may vary - adjust based on the batter consistency.

Add lemon zest and stir well.

In a separate bowl, beat the eggs with sugar and vanilla sugar until thick and foamy.

The mixture should increase in volume 3-4 times and be full of air bubbles.

Pour the whipped eggs into the kefir-flour mixture and gently combine.

Line a baking pan with parchment paper, grease with oil, and pour in half of the batter. Spread the sliced strawberries evenly over it.

Pour the remaining batter on top and smooth it out. Bake in a preheated oven at 180°C (350°F) for about 50 minutes, depending on your oven and pie thickness.

Remove the baked pie from the pan, sprinkle with powdered sugar if desired, and serve warm. Enjoy!
