Whole Microwave Eggplant with Cheese
A very tasty and simple hot appetizer in a hurry! Whole microwave eggplant with cheese bakes in just about 10 minutes: the eggplant cooks through well, and the filling becomes juicy and aromatic. Try it too!

Step 1
How do you bake whole eggplant with cheese in the microwave? Prepare the ingredients. It’s best to cook one eggplant at a time - enough for 1-2 servings.
Step 2
Wash the eggplant and pat dry. Cut off the stem end. Slice the eggplant lengthwise into two halves. Using a knife, make deep crisscross cuts in both halves. Drizzle with vegetable oil so it gets into the cuts.
Step 3
Place the eggplant halves on a plate and microwave for 3 minutes at 750 W. If your microwave’s max power is lower, increase the cooking time. Carefully scoop out the flesh from the baked eggplant with a spoon, trying not to damage the sides and bottom. Put the flesh into a bowl.
Step 4
Cut the cheese into small cubes - this helps it melt faster and better. Any cheese works - hard, semi-hard, or soft (like mozzarella). The key is that it’s tasty, high quality, without non-dairy fat substitutes, and melts well. Add the cubed cheese to the bowl with the eggplant flesh.
Step 5
Wash the tomato and dice it too. Add it to the filling bowl.
Step 6
Press a peeled garlic clove into the bowl. Add mayonnaise. Season the filling with salt and pepper to taste, keeping in mind it already contains salty cheese and mayonnaise. Mix.
Step 7
Stuff the eggplant halves with the mixture.
Step 8
Microwave again for 3 minutes at 750 W.
Step 9
Serve the baked eggplant as a hot appetizer or as a side for meat or fish. Garnish with herbs before serving. Enjoy your meal!
